What does mesh size mean for chili flakes?
Mesh size describes the approximate particle size after dried chili is crushed and screened. For chili flakes, the mesh range affects visual appearance, mouthfeel, formula consistency and how evenly the flakes distribute in the final product.
Buyers should not select mesh size from a catalog alone. A small sample is the fastest way to confirm whether the flakes match the customer's product appearance and production process.
5-8 mesh vs 8-12 mesh chili flakes
| Mesh range | Best for | Reference ASTA | Reference SHU |
|---|---|---|---|
| 5-8 mesh | Visible flakes, chili oil, sauce toppings, foodservice packs | 80-120 ASTA | 20,000-40,000 SHU |
| 8-12 mesh | Seasoning blends, smaller flakes, private-label spice products | 100-140 ASTA | 30,000-60,000 SHU |
How to choose the right mesh size
Start with the finished product
A sauce factory may prefer visible flakes that remain recognizable after mixing. A snack seasoning buyer may need a smaller particle size for better coverage. A private-label spice brand may care most about how the flakes look through retail packaging.
Define heat and color at the same time
Mesh size should be confirmed together with ASTA color and SHU pungency. If the buyer changes the chili variety to adjust heat or color, the flake appearance may also change.
Ask for a sample before bulk confirmation
For repeat orders, keep a retained sample or photo reference so both buyer and supplier can compare future batches against the approved standard.
